Why do old books/dictionaries become brown or yellow?

I think it has something to do with the acid in the paper. If you get archival quality paper, it's acid free. but they didn't have it until recently.

First answer good. Also, just being handled and the oil from our skin. The amount of Humidity. This all I know.
