I love a good vampire or werewolf fantasy, if you're into that sort of thing, in which case I recommend:
*Blood and Chocolate by Annette Curtic Klause (which releases on the big screen on Jan. 26)
*Twilight by Stephanie Meyer (and the sequel New Moon)
*The Vampire Chronicles (inc. Interview with the Vampire, Queen of the Damned, etc.) by Anne Rice
*Sabriel, Liriel, and Abhorsen (a trilogy of the only people who can stop the evil undead from returning through the 7 gates of death to take over the world) by Garth Nix
*Pretty much anything by Robin McKinley, esp. Rose Daughter, Beauty (both adaptations of Beauty and the Beast) and my personal favorite novel of all time, Sunshine (a vampire flick)
*Dracula, a great classic by Bram Stoker
And moving off the undead thing, here's a few with dragons, magic, etc.:
*The Pit Dragon trilogy by Jane Yolen
*Dragon's Bait by Vivian Van Velde
*Anything by Tamora Pierce (Lioness quartet, Circle of Magic quartet, Protector of the Small quartet, Immortals quartet, etc.)
*Anything by Terry Pratchet (esp. Monster Regiment or Carpe Jugulum- Pratchet is the most hilarious British author ever!)
*The Chronicles of Narnia (you've probably already read it, but why not mention the classics?) by C.S. Lewis
*Last but not least, the Phantom of the Opera by Gaston Leroux (not really a true fantasy, but a very good book with "magic" nonetheless)
Hope this helps!

Terry Goodkind's Swoprd of Truth series
George R. R. Martin's series beginning with A Game of Thrones
The Silmarilion
If you're old enough to get some of the dated references, read "Bored of the Rings". It's hilarious.

Pendragon series, my D.J. McHale (7 in the series so far, 8th on the way). Dragons, wizards, a powerful young boy- you name it. Everyone who reads Harry Potter says they enjoyed the Pendragon books. Try "The Merchant of Death" the first book
The Fallen series by Thomas Sniegowski. "The Fallen" followed by titles such as "Aerie" and "The Reckoning"
"The Hidden" by Margaret Peterson Haddix. A series of books about a future society in which every third child in the family is killed, this is about a third child who tries to stay alive.
Alanna, the First Adventure, by Tamara Pierce (I understand the Alanna series is very powerful and very much appreciated by women for its very strong female character)
Bartimaeus Trilogy by Jonathan Stroud. Three books in all.
*The Amulet of Samarkand
* The Golem's Eye
* Ptolemy's Gate

Pyramid Scheme by Dave Freer and Eric Flint is a good novel. I like the pacing, the plot and the quirky characters. The Dragonlance Series was also a good read. I also like the Dark Elf novels by R.A. Salvatore.

The Shannara Series - Terry Brooks.
Great writer, most of it is about emotions.
I'll say, however, that the best fantasy writer whose books I've read so far is Cristopher Paolini (Eragon and Eldest).

Definitely look into the Abarat series by Clive Barker. I believe it's to be a trilogy and there are two out so far. The second one is called Abarat: Days of Magic, Nights of War.
