since the egyptians not only mummified people but also pets, how about a mummy of a cat? Not a real one mind you (i know that some people suddenly drew a breath and said "what is she suggesting?") What I mean is a smallish sarcophagus painted with gold paint to represent a cat mummy. Use paper mache to make the sarcophagus and then paint it using the net pics of actual ones as a guide. Since alot of people do not know that the ancient egyptians also mummified pets it would also be educational....

a mummy, here is how i did mine

lay down on a brown long sheet of paper (gold sheet would have been better but i did not think until my project was over)

draw you bodies out line. draw on the paper your arms crossed over you chest

then take paint or maker and proceed to color in the paper to make you look like an egyptian princess
then turn over and do other side.

I would suggest the Great Sphinx. Everybody knows what it is. It is in Giza, Egypt. It is the body of a lion and the head of either Pharaoh Khafra or his brother Pharaoh Djedefra. And i think it looks cool!!

You could also do something about heiroglyphics. Make your own tablet to write some stuff on and put together a few sentences maybe?

a replica of the double crown worn by the pharoah after upper and lower Egypt were unified. http://www.ancientegypt.co.uk/pharaoh/explore/bluec_b2.html has pictures of the crowns and you might prefer to do one other than the double crown.
