In the United States, Christmas dinner is less standardized than the traditional Thanksgiving dinner. The U.S. Christmas dinner is usually baked ham (with cloves, pineapple ring and cherry on top) or roast turkey (deep fried turkey in the south). Some ppl eat Cornish game hens, beef steak or roast beef instead. I have also heard of ppl in the midwest having vennison for Christmas dinner. Side dishes vary from family to family: macaroni and cheese, mashed potatoes, roasted potatoes, green beans with onions and mushrooms, peas and carrots, corn bread, squash, casseroles, etc. Dessert is traditionally fruitcake, mincepie and Christmas cookies. Again, tastes vary and some ppl will have pumpkin pie, apple pie, layer cake, ice cream (e.g. peppermint stick), etc. Egg nog with or without rum is also served. After dinner chocolates are often served with after dinner coffee or brandy.

Staves could be staff, such as servants, or ways of dividing up a stage performance, as in a Christmas Carol (Dickens).
Tradtional meal usually includes pudding, Christmas (fruit and nut) cake, vege of choice, and can also be beef joint, Turkey (contemporary, imported from USA in 1600's), or goose. Vegetarians eat nut loaf, largely, instead of meat, but I have never tried it.

Depends on the culture.

Most Americans have the same menu as Thanksgiving. Some serve prime rib or ham instead of turkey and keep the sides the same.

Italians celebrate with a seafood menu. Hispanics traditionally serve tamales.
