Why not try Malta ? A small island in the middle of the Mediterranean Sea. Very welcoming people.

I would suggest not moving to the major tourist cities, especially not before you find a secure job because they can be extremely expensive. Cities such as Rome, London, Berlin will cost you a fortune! I'm in Rome right now for three weeks and it's costing me 4000 euros for a 2 bedroom and bath apartment. Trust me, I did a lot of research trying to find the least expensive place that would fit our needs and this was the least expensive! Try eastern Europe or a country that is not part of the EU because the exchange rate is awful to Americans.

You really need to secure a job before you go. You degree could be useful in any country, but you might have an easier time finding something the farther east you go. Countries like the Baltics, Slovakia, Hungary, Romania, etc tend to be easier for a foreigner to get a job there.
