that's quite a deep question if thought about too much.
there can be no real answer as nobody knows what a deja vu really is.
I'm gonna try to be a smarty pants and give a clever answer but this may not be the correct answer in your reality.
it is however a correct answer in my reality and maybe other peoples realities.
it all depends on your own personal belief as to what a deja vu really is.
if you believe that everything that happens in life has already happened and will happen again and is unchangeable then a deja vu could well be a time-slip from one dimension to another.
if this is the case then the opposite to deja vu must be time-stability
if you are however on about the word deja vu in a dictionary sense rather than the actual experience then the simple answer is reality.
sorry if that seems a bit of a long winded answer but i could swear this has happened before

Jamais vu is the disconnection of perception and memory. It is a irrational feeling, occurring in some forms of epilepsy and some psychiatric conditions, that what is being perceived has never been seen before.

Hmmm... in English that means already seen, so the opposite would be never seen or unforeseen. "Jamais vu", as suggested by another answerer, seems to be right since "jamais" means never!
