Conan tapes at 5 PM, but ticketholders are asked to show up around 2 or 3 PM.

Leno starts taping at 5:30, don't know about Conan.

I believe both shows tape during mid-afternoon. It's an NBC policy I assume. But, obviously, the shows are not live, so it would be impossible to tape during the late evening and possibly a hassle during mid-evening, or even morning for that matter. You have to take the celebrities and staff/crew into consideration and their busy live(s).
