I am really only thinking of specifically one God. The one that Wednesday and Shadow meet in Las Vegas and Shadow keeps forgetting, and also follows the flow of money. I too feel like it should be on the tip of my tongue, but nothing comes to me.

You're not the only one! He is not named... and Gaiman keeps his identity a mystery. There's a whole website devoted to the characters in American Gods, and here's the page to the "forgotten god":

I love this book, and the mythology -- it has spawned a new mythology of its own. Gaiman's website (which began with American Gods) is below. If you enjoyed the book, there are discussion boards and a lot of interesting trivia about this and his other work. Gaiman himself checks in regularly.

I think it's the god of big business/politics/profits. He's obviously one of the 'new' American gods because he's well-worshipped. The link someone posted talks about him taking pity on a waitress who wasn't paid and pointing out a guy who's going to win big later tonight. That's not charity, that's pimping. No one knows his name or can remember him because the truly powerful business people in the US are anonymous; they pull strings from afar and watch people jump. I could go on and on, but it's just my opinion. :)
