I didn't mean they don't come to work, but everyone is going to call in sometime such as if they are sick... but who does their work that day?

Form relationships with similar businesses who may be able to help you out, likewise you may be able to help them out sometimes.
Not all similar business will operate in a ruthless or competitive manner.
I have huge amounts of support from similar businesses, and probably once a month pass on work that is outside of my scope or capacity to a competitor. They in turn do good things for me.

It's a real challenge. There are few options here.
1. Building a core of trained substitutes (much like school systems do).
2. Build the liklihood of this happening into your planning.
3. Hire more people (not always possible).
4. Decide whether the person is enough of the right fit that it's worth putting up with.

I would suggest doing what any boss would do. Start looking for another person to fill the slot. Then give the late person the boot. Having such a small business you really need a more responible person to watch your back anyways.

Either go and cover for them or hire a part time employee for a few hours a week so if the full timer calls in sick you have a back up.
Having one employee and not expecting something to happen to them is poor management....especially if you don't want to work.
