The only thing you can do is to try to keep as much sweat away from your hairline as possible...... Keep your hair in a loose, high ponytail, using a covered elastic or scrunchie. If you do a regular ponytail, you will get a crease on the back of your head where the elastic is. If you pull it more on top of the head, and use something softer to hold it, there's less damage done.
You can also try a claw clip. Pull hair up and back as if you were making a ponytail, and twist it loosely just enough so that strands don't fall out, lay it flat on top of your head, and claw clip it.
Either way, you also need to keep sweat off of your face and forehead from reaching the roots around your face. Either wear a wide terrycloth headband and position it on the hairline, or use a folded bandana.
If you do get sweaty, carry a small blowdryer in your gymbag, and blast roots as soon as you're done working out. The less time roots stay wet the better.

I don't work out when I have my hair straightened, it's just impossible for me to keep my roots from getting all curly! But I sweat a lot, so I guess that's a different story. I put my hair in a high ponytail and wear a cloth headband when I have straight hair and I'm working out and that seems to keep it to a minimum. Good luck!

Speaking as a naturally curly headed person: A ponytail will keep it out of your face when you are working out. But, when you sweat and even the humidity that can be in a lot of gyms will make it difficult to keep straight. You may can try sweeping it into a bun and putting one of those clippy things over it. A LOT of hairspray may help. But, curls are curls and they are gonna come back if they even get a bit damp.
