I agree livebearers could be fun, since the students can keep track of the babies. Depending on the size of your tank, you could get guppies in as small a tank as 5gal though you can only keep 3 or 4 in there; platies in a 10 or 20gal tank, or mollies or swordtails in larger tanks.
You can also keep cories as bottom feeders in the same tank. They breed pretty easily if you keep the water quality high and they're egglayers as opposed to livebearers, so you could see both kinds of breeding.
I personally have both platies and cories right now, and they are so cute and playful.
What class is this for? Do some research on the nitrogen cycle. It's interesting, chemistry/biology based, and definitely will keep your fish alive longer if you're familiar with it. Start with the articles section at www.aquahobby.com

I would say guppies, because they are freshwater fish and you can have a ton of them together, or only a couple. Plus, they reproduce a lot, so there will be fish there for awwhile(make sure you have something in the tank that lets the babies hide because the males sometimes eat them is they are hungry/too many fish)

goldfish are fresh water fish and very hardy. they do not reqire a heater but do need a filter and air pump. if kept well they can live for up to 45 years of age. goldfish with fantails can get to be 15 inches long and common goldfish can get to be 2 feet long(24 inches).

fancy or fantailed gold fish. they are VERY hearty, and can live for a long time if taken care of. they're also beautiful. just make sure that you have a minimum of 10 gallons per fish, because they can get pretty big!!

I would go with mollies or guppies. They are live bearers. If you don't want babies, make sure you only get all males or all females. They are very friendly healthy fish.
