Must it be a fairy tale that's fractured, or can it be a folktale?
A folktale that could be fractured is The Three Sillies (girl goes to cellar to get some liquid refreshment for her boyfriend and notices an axe stuck in a rafter [an axe that's been there every day of her life, mind you] and starts crying because she might have a child who will one day come down to the cellar and might get killed by the axe falling--her mother comes down to see what's taking so long, hears her daughter's worry, starts to cry with her, her father comes down, hears the story, and begins to worry with them, finally boyfriend hears of it and either a) tells them that if he can find three people sillier than this family, he'll come back and marry the girl or b) pulls the axe out of the rafter and tells them to get over themselves).
Or, you might investigate fracturing an urban legend, if your teacher will allow it--like a take on the Mysterious Hitchhiker who does NOT disappear, but actually gets home, much to the mother's relief.

What about Hansel and Gretel having an imaginary journey with their mom on a rainy day. It gets rid of the mean step-mother and desperately rug mat of a father. Not to mention the child eating witch. Maybe you can make the witch into a nice grandmother with sweets in her candy bowl.
Good luck with it. I happen to like thinking about fractured fairy tales.
I have also thought about little red riding in the hood. But instead of her jacket being red. Her bike is red.

Why not combine several of your favorites and weave it into one story? And be sure to research any myths or legends that relate to it, especially fairy lore and superstition. It's always amusing to see beings out of their element, like in modern day or trapped in dolls or toys or in some way making the normally supernatural characters incumbered or humbled.

I've always been partial to 'Menachem and the Great Glass Parking Lot' but that's kind of obscure; how about 'The Three Capitalist Pigs?'

Try one like Cinderella or Snow White. In the original Cinderella, her stepmother is brutally executed, and in the original Rapunzel, she gets pregnant and dumped in the dessert. Write a fairytale about Snow White actually dying, or Cinderella's sister marrying the prince.
