Perhaps it is a colloquial shortening of the phrase "Holding Cards," ie, "Hol' Cards"?

I play alot of poker and this is strictly a guess mind you but since that term was introduced in 5-card STUD and the dealer literaly piles the cards up as he deals,I gonna say your bottom or first card would seem to be in a "HOLE' in relation to the other cards

You know, I thought they were called "hold" cards because they are the ones that you actually holding in your hand. Like you are holding a Jack of Diamonds and a Deuce of Spades.

They are unseen by the others, so are in a 'hole' as far as they are concerned.
