My guess would be, that like the Nile the two rivers would flood regularly and deposit rich silt on the land in between.

Because Mesopotamia means the Land between two rivers and every land between two rivers is good for Farming.

It's flat and easy to cultivate. Also easy to irrigate and to fertilize by flooding.
