You can take classes for anything you want, but the issues arise when it comes time for credentialing.

The State Board of Nursing will ask you disclose prior ciminal history. You may want to contact your State Board of Nursing, but I doubt a theft charge will preclude you from sitting for boards and becoming licensed.
