is cricket counted as one? what about bakery and farming? what about polo or fox hunting? are they caountryside based sports? what other hobbies and crafts and industries are countryside based?

surprisingly there is a lot of ancient and modern industry in the country...eg open cast mining...and stone quarrying...slate quarrying, tourism is another area....farming arable and animal as you mention..and also the shops in towns and villages, tradition industry such as farriers are still around some are mobile..but fox hunting is now banned.

How about coppicing, or thatching for craft/ industries? And don't forget rural tourism!

Apart from hunting, how about rambling or orienteering as a sport or pastime?

You can only call it countryside if it needs countryside to do it. For example you can't do foxhunting without being in the countryside, but you can play cricket in a city park so you can't really call it a countryside sport.
