I would use 10w30 in the mustang and 5w20 in the escape.

Not trying to sound like an a** but the best place to find this info is in the manual or it is usually found on the oil fill cap and even at times the dip stick will have it . Do know for 100% on the escape ford rec. 5w20

You older car will need a heavier oil than factory recomendations. I suggest 15-40 in a semi synthetic with changing intervals at 3500 to 5000 miles. Full synthetics tend to harden the seals. Found this out with a Ford Explorer 6 cyl. and Merciedies ML320.
Check your spark plugs for fouling and tail pipe to see of you rings are still holding. At 15 years a four banger may need a rebuild.
I used to change the ML oil about every 7500 miles and sold it at 186k miles to a local dealer that is still using it.

The Escape is 5W20 all the time

The Mustang is probably 5W30 in the cold or all-year and 10W30 hot summer only.

10W-30 WOULD WORK FOR BOTH. I USE THE HIGH MILEAGE 10W-30 IS MY TRUCK. IT HAS 98905 MILES ON IT AND IT RUNS LIKE A TOP. MY TRUCK IS 9 YEARS OLD AND DOESN'T BURN A BIT OF OIL. IF YOU BUY THE 5 QUART JUG IT WILL BE ABOUT 2 OR 3 DOLLARS MORE, BUT TO ME ITS WORTH IT TO KEEP MY BABY ON THE ROAD.

on older cars 10 x 40 is my pick...a little thicker to help seal old rings and valves
