It's up to you. I always prefer to get little ones, because as you say, you can watch them grow. You also know how exactly how they were raised, and that they were properly fed, that their was has always been clean and they don't have any illnesses or anything. Small ones are also less expensive.
But babies turn into adults pretty quickly, so in the end, it doesn't matter all that much. If you see adults for sale, and want them, there's no reason not to get them. It's up to you.

depend on how experience you are with aquarium. If you can take care of them and keep up with the water changes/ ph/ amonia... etc, then getting little one and raise them is more rewarding. If you're new or not yet used to it, a grown one won't die from small mistakes.

I have had piranhas. they are a big don't. They are lazy fish. They also are vary expensive, because they eat live food. I would not recommend small ones but larger are OK.

I think you should get little ones so that you can build a relationship with them and then make them 'a part of your familly'.

it depends...babies are more vulnerable to getting stressed and dieng! Adults have usually gone thru this stress already and may tend to live longer in your tank!
