There aren't 11 players in a football team. You are forgetting the substitutes and also the players who don't attend a game (substitutes of the substitutes so to say). A team can have as many players as it wants.
There are only 11 playing on the pitch, because... well, these are the rules! But it can also be that a team ends up playing with 10 or 9 or even 8 players, if some are sent off.

First of all, are you talking about soccer or American football? I will attempt to answer the soccer aspect.
Actually, there isn't any specific reason why there are 11 players per team. However, each player does play an important part. The players can be broken into two main categories, offense and defense.
Defense is comprised of the goalkeeper, defenders (3, 4 or 5; depending on formation) and midfielders.
Offense is made up of the midfielders and forwards.
Now, I just said midfielders twice. That's because there are sometimes defensive midfielders and/or attacking midfielders depending on the team's style of play and formation.
It goes more in depth, b/c some teams use defenders as attackers and switch formations and styles of play during a game.

Because they need 11 players to even out for different positions (forward, midfield, defense, goalkeeper) Besides, the field is pretty big, 11 players would be pretty reasonable to be play on the field. And buddy, it's not 11 players on a football team. There are more people than that. A team needs extra people to substitude in case of injury and lack of energy.

There are 11 players on a team because the field is too large for any less to play while having consistent ball movement and action. Think about this: if you took just 8 vs 8, there would be way too much open space on the field and the players would tire out too quickly.

Yeah right, 11 player on a team??? Do they all play offense and defense and special teams? Lets home no one gets hurt or they will have to play shorthanded.
Dude! even in Soccer there are more than 11 players on a team..they are called substitutes!!
