Passover first occured in the Book of Exodus when the final plague was about to happen. God was going to kill the first borns in each house so Pharaoh would let the Hebrews go. God told Moses that if you put the blood of a one year old male sheep on your door, the first borns in that home would be sparred from the Angel of Death. When the night came, the Angel of Death "passed over" the houses with the blood on the doorway and went to another.

When the angel of death was sent to kill the first born male child in every house of Egypt the Jews put the blood of a lamb over the doorway so the angel would "passover" that house and do no harm.
FYI: Jesus's last supper was the passover meal and, like the lamb, he was slaughtered to save men's souls, by his blood judgment will passover you.
