Your children are still too young. You would be far better to wait until they are both over 5 years before thinking about bringing a puppy into the mix. I appreciate you want to find a good breeder, but most good breeders will tell you the same - you have enough on your plate right now, without bringing in a puppy. Picture this - puppy messes in the house and your children, and maybe their friends are crawling round the place. Hum. And actually you may well, if you still want to go ahead with this, be better to consider adopting a slightly older dog, who is used to living with children. Having a puppy is A LOT of work - do you really have time to take on another baby? Try Wood Green Animal Shelter up at Godmanchester. I'd bet they have any number of Staffies, and Staffy types looking for good homes - and there's an RSPCA centre in the St.Albans area as I remember - you might try them as well. The usual way to contact good breeders, is via the Breed Club. You could also look on the Champdogs website - there are some good breeders on there but you will need to do your homework. But please reconsider this before jumping in.
