The teflon doesn't stick to the pan, the pan sticks to the teflonn after the Keebler Elves work their elfin magic to the oven!

GREAT question! That was one of the original problems they had with it (and, why if you have older pans, you need to be very careful washing them.)
They carefully pre-treat the surface of metal both by roughing it up and coating it to make the Teflon stick.
What I like that has become more common in the last couple of years, are these soft baking pans that are just pure Teflon. They are soft - so they don't take up as much space during storage, but it can make manipulating them tricky (until the bread/cake/whatever is firm) but they work GREAT.

There is a very thin layer of plastic on top of the metal part of the pan. the teflon is attatched to that. That's why you shouldn't use metal on teflon pans, it will scratch the teflon and let the plastic burn and get into your food.

The Teflon is in liquid form when placed on pan and will stick to the metal, kind of like a melted crayon. When it hardens it the becomes non stick.
