Beatles - obviously. Jefferson Airplane - what was the San Francisco scene like in the '60's? The Byrds - outstanding folk rock - they basically invented it. The Moody Blues - the "inventors" of progressive rock. Bob Dylan - to have not listened to early Dylan is to have not lived. Elvis - to find out what started all the fuss, not to mention his early Sun stuff is great rockabilly. The Beach Boys - California sun and surf. Tom Petty and the Hearthbreakers - carrying on the tradition of great rock beginning in the mid-'70's. Dire Straits - outstanding rock from the so-called "new wave" period. Cream - good late '60's rock with a touch of the blues. James Brown and the Flames - soul and funk so you'll know what it really is.

Chuck Berry
The Beatles
The Rolling Stones
Frank Zappa (in moderation, too boring in may cases)
Led Zeppelin
Pink Floyd
Jimi Hendrix (Experience, Band of Gypsies...)
Joni Mitchell
XTC
Echo & the Bunnymen
The Clash
The Jam
Joy Division
Talking Heads (early albums, before and excluding Little Creatures)
Brian Setzer (and Stray Cats) - to compensate for all early rock'n'roll & rocabilly
Faith No More
Radiohead

Those are the innovators; acts like U2 or Red Hot Chiilies just stole others' ideas and built a little (if any) upon it, so they don't count.

and in jazz

Django Reinhardt
Weather Report
Pat Metheny

(just my favorites)
