The appeal does lie in the fact that the colors are complimentary, as a previous respondent said, but their original significance comes from Europe. In the long, cold winters, the only color to be found in the snow was the red of the holly berries and the green of the evergreens. To decorate for Christmas, people would cut holly and evergreens and hang them up inside. As time went on the colors went beyond their natural origins and came to represent the season in general.

The red and green come from the colours present in the Holly bush, used traditionally at Christmas to represent the crown of thorns as placed on Jesus's head: as in the prickly dark green holly leaves and the drops of blood spilled by Christ: the deep red holly berries. The colours just happen to co-ordinate!

These are what's called "complementary colors", they are widely used for their striking effect when juxtaposed. There are three primary colors:red, blue and yellow. You create complementary colors by mixing two of these and leaving the last one as such. eg: red and (blue and yellow= green)/ yellow and (red and blue= purple)/ blue and (red and yellow= orange) . You can see many examples of this kind of use in Van Gogh's or Toulouse Lautrec's paintings.

I think the red represents holly berries, and the green represents evergreens.
