I started playing a couple of days ago I have a night elf hunter at the moment but people have said that there is no need for hunters. What class is the most in demand?

Hunters are easy to level so a nice starter class.

It varies server to server but generally healers are the most in demand especially druids.

With the expansion coming out in a couple of weeks who knows what will happen?

Just a little edit, my main is a priest on an eu server I rerolled her after my lock couldn't find a raid spot. Now it seems that there are a flood of priests at least in the EU.

An to whoever said it, We DONT just stand back and heal! and lets face it in a raid most classes are just spamming same button anyway :P

My advice is play the class you enjoy.

It seems warriors and priests are in high demand. As a priest, it's fine if there are two in a party. One will play main healer and the other can play backup healer/shadow damage. Or they can alternate main healer...I've seen that work very well sometimes. As for warriors...almost everyone wants a tank to take the damage. Should be easy to get a group once you have shown that you know what you are doing with it (don't have to be super...just need to learn how to get/keep agro, how to taunt a creature off the priest when they get agro for healing you, etc.)

best class to roll is (the way i see it) is priest; the reason is most people don't want to just stay back and heal; also, it is kinda hard to solo. you won't be able to do some of the high level quest alone, but if you are a decent player, you'll be picked up for pretty much any instance runs.
Another is druid which is pretty much the same reason as priest but since you can shape-shift it's more fun. there really isn't a "best class" to roll since they all have their ups and downs. if you want to get picked up by a guild or instance groups often, healing class is the way to go...such as priest, druid, shaman or paladin.
if healing isn't your taste than...you can go for damage dealers such as mage, rogue or warlock but these are classes that majority of the people already have so...

I'd say that all the classes are special in their own way. Realy the question is what do perfer to do? Close combat, Magic, range, ext.

Roll a warrior...Tanks are in short supply, and I guarantee you will always have a group, at least though the lower lvls.
