They are considered 'carcasses' since they died as opposed to being slaughtered. SO

Definition of Carcass: The body or a part of a domestic animal or fowl that has died or has been killed otherwise than by being slaughtered for human or animal consumption.
As a 'general rule', Carcass(s) must be disposed of as soon as reasonably possible, ie; within 48-72 hours

Usually when a cattle die they are picked up by the renderer and processed to be used in animal protein-based products (like some pet foods, agricultural feeds, etc). However, even the renderers have deadlines and I'm sure they are not able to get out there to pick up all those carcasses, so most likely the cattle they are not able to get to are left to rot, while the ones lost at the feedyards are either rendered, burned, or buried. It really depends on the area, what is available, what they are able to do due to the weather, and the individual cattle owners' decisions.

I'd hate to think they take dead animals and make any kind of food--human or pet!

They are buried in mass graves.
