That is very subjective. If you are looking at the current line of customer the GT1 is just amazing. If you are talking about the entire history I feel that there are 2 that are just so different to each other that they both need to be mentioned. These are the 962 and the 959. The 959 came 2 ways in rally (Paris to Dakar type) and street forms. Do a yahoo search on them they are just amazing. I spent over 15 years with Porsche Motorsports in Germany and I have worked on many historic and great cars while there. I have driven all the cars I mention here.

Best by what measurement? In terms of racing success, it'd have to be the 956/962, which ran up a pretty amazing win total and was competitive in competition for more than a 10 year period. Though if you are talking racing, it'd be impossible not to bring up the 917/30 for it's short period of total domination (as well as the earlier 917K for that matter, for bringing Porsche it's first overall victory at Le Mans).
The 928GT could probably be considered as the best touring car the company produced, while you'd have to look at the 959 or Carrera GT if you judged by sheer technical innovation.
Though, for all of that, taking no specific criteria to your question, I'd say the 1973 911RS, just because it might be the best example of what makes a special Porsche special. And it has remained the definition of what is most sought in a Porsche on through the years (with the 3.2L Clubsport, the 964RS, 993RS, and the recent run of GT3s).
