there are some decent answers here, but they leave out some very important key points I will sum up. Physics is defined as:

"The study of all things existance, which uses the language of mathematics to describe the behavior of all physical systems in laws which are expressed in the most accurate and simplest terms possible."

The key points:
1) The study of ALL THINGS IN EXISTANCE:
Basically, physics is the study of everything in the universe. Any physicist worth their salt will tell you that biology and chemistry are highly specialized fields of physics. Anything that exists includes things which cannot be generally felt or seen (such as energy, imaginary particles, etc)

2) LANGUAGE OF MATHEMATICS:
Conceptual physics is good, but the main goal is to describe the behavior of systems in quantifiable and calculatable terms so that predictions can be made for future behaviors

3) EXPRESSED IN THE MOST ACCURATE AND SIMPLEST TERMS POSSIBLE:
There are a hundred ways to skin a cat, and physic recognizes that there might be more than one correct way of understanding events. The solution which is considered to be correct, then, is the one which is the easiest to understand and calculate. In fact, the very reason that the sun as the center of the universe was eventually accepted over the earth as the center is because the calculations for micro-orbits are easier with the sun in the center. Relativity has since shown us that any point (sun, earth, or other) can be defined as the center of the universe and this definition has scientifically replaced heliocentric (sun centered) theories because it is more accurate.

Physics is the science concerned with the discovery and understanding of the fundamental laws which govern matter, energy, space, and time.

In other words, finding the mathematical laws to describe the Universe.
