Mine goes to about 5/8, is that normal? Seems high to me, and it's winter, what will happen in summer?

sounds normal
to test it after its warmed up let it idle listen for the fan to come on when it comes on look at the temp when it goes off look at it again this is the normal range for your car its that simple good luck

gauges aren't real accurate , you are seeing the thermostat slowly open letting a little of that very cold water into the loop. it will not let it all in at once , so will let the engine temp. come up slightly rather than dump wide open and have very cold coolant come in and crack the block . those things are designed to work in Canada and if they opened all at once it would happen here.before summer i would replace any and all hoses 4 years and older , thermostat , coolant and serpentine or fan belts .

You can't always trust gauges. I would use a meat thermometer and check the coolant temp. myself.
