Water and ions get reabsorbed in the kidneys, more specifically in the loop of Henle.

The main location for the absorption of food is the stomach; however before the feces are defecated from the body, the anal sphincter controls what goes out. Vitamins and water are reabsorbed, malfunctioning of the anal sphincter can cause the body to lose too much water, which can lead to other health issues.

I am assuming you are asking about digestion and absorption. the water is absorbed in the large intestine. The vitamins and minerals in the small intestine. Some vitamin K is absorbed in the large intestine, because it is made by bacteria there.
