I'm Looking for How and why Tempered glass breaks how it does (Not how its made)

The glass becomes a tempered glass after an annealing process that changes its structure to a more crystalline and granular. That crystalline structure while makes it tougher than standard glass ones pushed beyond stress the shock wave propagates trough 'granules' breaking their bonding.
