Knitting -- or any other needle craft --- can be frustrating when you first begin. Once you are comfortable with the basics, you just need to practice and it will soon seem easier.
I am a lefty who learned to knit right-handed, so, if I can do it, you can too.
I like the website www.knittingpatterncentral.com They have good instructions for beginning as well as several patterns you can download.
The other websites that have been mentioned are also good.

Knitting is only difficult if you still have questions while you're doing it!
When I decided to learn to knit, I looked for online videos, because I needed to see the stitches "in action" instead of just looking at drawings in a book.
I came across several online videos that really helped, and now I'm very comfortable with my knitting.

I still have times when I get confused with a difficult pattern, but I always get questions in my favorite online knitting forum.

Try the lionbrand website:
www.lionbrand.com
they have free knitting lessons you can print out and follow. They also have free patterns for you to try. The basic knitting stitches, knit, purl, and stockinette, are pretty easy once you get the hang of it. It can be a little tricky to get started. Try the local craft stores too; they may have free or low cost classes to help you.

The level of difficulty of knitting depends on the person. Some find it really really easy, others really really hard.
Naturally, it is a little challanging at first, but becomes more and more effortless the more you do it.
About.com is an excellent site for all the basics:

I believe they even have photos for the step by step process.
