FROM AN OFFICIAL SPOKESMAN OF K.F.C
We at KFC for years have been looking at the brand name and been toying with the idea of changing it, What doing this does is in fact keep the brand in the public eye and people talk and in fact we then achieve advertising at a fraction of the cost to what it would cost if we were to in list the help of the media or TV. I can tell you that 0% of the chicken we use has wings missing beaks gone or is in fact registered disabled

I'm sure it was during the late 80s, although they really weren't able to remodel all of their restaurants untl the mid 90s. That's the same situation Boston Market had, as they used to be called Boston Chicken. They're own by the same company whoever doesn't know.
And they abbreviated because of possible legal issues they may have using the Words FRIED and CHICKEN.

It didn't start in SLC. In Utah in the sixties, it was called Harmon's. Harmon held the franchise in Utah, I believe. Colonel Sanders started the franchise in Kentucky and as the name spread, different names were attached to it. Utah started with Harmon's and later picked up the national standard of Kentucky Fried Chicken.

What you have heard is what's called urban legend - not true but some people tend to believe it. They have to pass numerous health inspections so it's absurd to think all of that is true. Kentucky Fried Chicken began using KFC about 10 to 15 years ago when the low-fat craze began simply to de-emphasize the idea of their food being fried. I think it has worked well for them and they serve some chicken that isn't fried now anyway.

To be cool.
Most people, not just rednecks, were shortening it to KFC already and had been for years. Guess they thought it sounded cool.
I don't think your business name has anything to do with whether you can sell red meat or not. Popeyes sells red beans and rice and it has pork sausage in it.

Because people do not really like the word 'Fried' as it sounds very unhealthy, therefore KFC shortened shortened their name, so it sounds more appealing and cover the 'fried' word

It wasn't the word "chicken", it was the word "fried". People saw fried as unhealthy, so they took it out.
