I am not a fan of Hendrix by any means, however, his rendition of "The Star Spangled Banner" comes to mind :)

Fade To Black - Ride The Lightning -Metallica - Kirk Hammet
Why?
It always made me get caught up and lost in visions of fantasy that would take me away from reality for the entire length of it. The ultimate aim of any fair dinkum metal rock solo I believe. It stands out more than Gilmour (just edged out - Shine on you crazy diamond), Page (yawn - Stairway To Heaven, its brilliant, but so predictable to be a best mentioned solo).

Freebird. No contest. It's actually just Allen Collins playing gutair overdubbed 3 times, but live they used 3 gutairists. Though in my opinion that's the best solo ever, it's not really metal. I would say Fade to Black and (yes, I know the song sucks) November Rain.

I can probably think of a bunch in time but a couple that come to mind are Sweet Child o Mine by GNR and the live duel guitar solo from the Eagles Hotel California video.

The solo from "Highway Star" by Deep Purple is great, also the solo from "Reeling in the years" by Steely Dan, that one has been considered one of the best, even by prominent guitarists.
