With the information you gave, it is too hard to guess the actual figure. There are just too many variables that come into play. One thing you can do is go to www.kb-silvolite.com and they have a calculator that you can use to determine more specifics on the engine. A 600cfm carburetor seems a bit small for this engine, but then again I don't know the bore of the engine, the compression ratio, which heads you have, work done to heads, and when you say big cam, how big? The horsepower could be from 300 on up to 500 or more. Headers also come into play as one needs to know how much you intend to choke the engine down by installing the wrong pipes, mufflers, and the tube size of the headers. You can also go to www.chevyhighperformance.com click on the tech section, and find your engine build up. You will get a very close estimate of the actual power it will make.

First of all what's your dispalcement? I would first think it's a 350 but it could be larger or smaller, the Z06 uses a 428 ci small-block. Are you running a stroker engine or is it more towards an over-square design? ect.
Best thing I would suggest is rent the services of a dyno shop for a few hours, then you will get a definative answer and probably gain a few more hp through on-site tuning made possible/easier by the dyno readout.

assemble the car and find a chassis dyno , i could say 1000 horsepower if it makes you happy , but then we all know thats a real big lie : )
