Many spiders over winter as eggs, the adult females and often the males will die off. Most animals strive to leave progeny behind, this is known as biological fitness, so dying isn't big deal for the adults, as long as their progeny survive.
Some spiders take several years to reach adult hood, and thus will overwinter as juveniles. Many spiders as well as flies go into a state of dormancy known as diapause, this a complete metabolic shutdown which allows them to survive the winter months without depleting them of energy.

Once day length and temperature are restored, they will often emerge seemingly unscathed and continue their biological business

Flies die off during a normal winter and their laid eggs are hatched in the spring. As far as spiders go, they usually live through the winter, but since there are less insects for them to catch in their webs, then they more less hybernate or are much less active.

Spiders will hunker down for the winter. As for flies about 99.9% of them are killed off by a kind of fungus in the winter months. However, that 0.1% is all that is needed to re-generate the species in the following spring. Eggs are not laid by adults before they die off.

Some of them do die off in winter, and in that case, its their eggs that survive to hatch the following spring. But most insects dont die by freezing (if your winter is one with snow), if you put a spider or a fly in the freezer then thaw it out later it will come back to life!
