The things you would have to deal with are common in a lot of jobs so a generic business book on these topics may help:
How to handle conflict
How to handle difficult people
How to think well/properly under pressure
How to handle medical emergencies
How to calm others down when you're scared.
See if you can find a book written by a flight attendant/air host(ess) about their own job. Since most flight attendants were women, reseach may be all by women, but if you look at/recognize the men's side, that'll be a plus for you too!
A book on the commercial industry would be useful, if not in your interview at least as general background on where all these planes are going and why :)
