You have to work out why they lie.
Is it to avoid scenes? Is it because they have so little respect for you that they can't be bothered with the truth? Is it to make them look big? Do they secretly despise you or are they afraid of you?
Let them know you know they're a liar and never, ever believe them. Check up on everything they say or do. This will humiliate them. Unfortunately you cannot respect a liar.
Do yourself a favour and walk away. Life is too short to live with a liar. I know, been there and done that.

Keep a journal, write down their lies and call them on it. You won't win the fight but it will shut them for the time being, could cause more problems in the long run though.

ignore them it's the most potent fighting machine you can use, as in all probability the lie is told to seek attention of some sort and being ignored is potentially the most ego breaking action you can take.

Stick to the truth and tell them when you know they have been lying. Catch them out in front of people to try and shame them into telling the truth.

a righteous man doesn't need to defend himself, so if someone is telling lies or telling a lie about you and you know the truth just ignore them.

create a rumour for them to pick up on, make a game of it, to see how long it takes to come back around to you.
