if you were filling in a form, and it said status, if you were going out with someone, but not like engaged or married or single, what would you put??

Assuming you weren't previously married and didn't kill your spouse, entitling you to "widow" status, the answer is SINGLE.

Single because it is looking for a legal bond.
Single - no legal bond
Married - legal bond
Widowed - legal bond.

It all speaks to legal status of your relationship....which come to think of it might be what irks some gay people LOL

Otherwise you can go for "Involved"...
