I'm sure there are healthy men out there who are willing to donate their sperm the old fashioned way for under $500. Or is this illegal to advertise?

Why question their motives?
Sure some poor bloke is missing out on sex. But then there is no chance of 16 years of child support either. For a few hundred bucks you can make an old fashioned sperm donation to a local the hooker. (if that is your thing). No strings attached.
But to try to answer the question, tired of waiting for the right bloke to come (sorry) along, Don't want the baggage, to get pregnant, Masochism. Some desire to prove something, lesbian ,because they can, fulfilment, don't like cats or dogs, fashionable, because it costs thousands of dollars,to have a child, easier to pick from a catalogue than to catch the one they want, better quality than the one they can attract or a hundred and one other reasons that female logic could justify.
Personally I don't think it is a good idea kids are extremely challenging even for a happily married couple.

boy am I going to cop a roasting

Some women want their partner to be the father, so they use his sperm to artificially inseminate. Others want a kid with no man baggage. What if you one day changed your mind and fought her for custody? The women don't want to take that chance. If they wanted some bar guy to be the sperm donor, they would have already tried that route.
