I'm applying for an internship, if they make me an offer and I accept, am I legally bound to the company? I'm going to be getting lots of offers these next two months and I don't want to let the best one slip out of my hand or sell myself short. Help, ideas???

Unless you sign some kind of contract (and even those you can usually get out of), you won't be under the internship's thumb. However, you do not want to burn bridges early. Word will get around that you're unreliable. Rather than accepting an internship position, just to turn it down for a better offer, tell them that you're interested but will require 2 weeks to think about it and be sure that you can devote yourself to their company and goals. Most companies will understand that you can't just drop everything asap for them.
