Miso marinade for salmon
• 1 cup sake
• 3/4 cup mirin
• 1/2 cup white sugar
• 1/2 cup white miso
Miso sauce serve with fish and rice
• 1/2 cup rice wine vinegar
• 1/2 cup sake
• 1/4 cup mirin
• 1/4 cup soy sauce
• 2 tablespoons chopped ginger
• 2 shallots, chopped
• 2 tablespoons heavy cream
• 1 pound butter, soft
• 1/4 cup combined, toasted white and black sesame seeds
• 3 tablespoons miso marinade
• Salt and pepper
TO MAKE FISH
Over medium heat boil sake and mirin, reduce by half, add sugar and miso, cool and marinate fish overnight.
In a sauté pan over medium heat melt butter. Add salmon to pan and caramelize both sides. Place the fish in a 450 degree oven for six minutes. Remove and allow to rest.
TO MAKE SAUCE
Reduce vinegar, sake, mirin, soy, ginger and shallots over medium heat until almost dry. Add cream and bring to a boil. Reduce heat to low. Whisk in butter slowly, creating an emulsion. Whisk in sesame seeds and miso, keep warm.
