Well if your into Jamband music you would know that Noodling is a term used to describe a certain type of improvistional jam riffs. I would suspect that Okie Noodling is some type of Bluegrass or Jamgrass noodling.
Or its a movie about rednecks catching fish with their hands? Wow, who knew...

Okie is like Ok. Nodddling is to fish for catfish using your bare hands. I don't know what they are together, though.

Yup, it'z the way dat dem dare folk in "Oaklahoma" mate(couple,do it,or eat and have fun). I haz a couzin outa Tulsa by bout an half hour (she 17 & me10) that vizited us one summer and she taught me all about Okie Noodling. I guaradamntee youz dem folk don't yodel or noodle, they swhaller!!!!!! Tried to get me to noodle but Man i'z waz SCARED!!!!!!!!!!!!!!!! an she did it wit her bare hands!!!!Callin' me alsort of fishy names an all jeez, She even calt my dog CATFISH even though my gurl callz it "Wilbur". No matter what leeve dem noodling gurlz by dem self cuz dey can hurtz you. Go outz and findz youzelf a good woman that doez anythin you ask ov her and youz youzself would do in return tenz of timez and be happy cuz "noodling gurlz iz NASTY!!!!!!!!!!!!!!!!!!!!!

Thats very popular around here on Lake Texoma. I see alot of guys (a few gals) here in the E.R. with some awesome injuries from that Xtreme sport. They really dig it though.
