It depends on the species.
A good general tortoise diet goes something like this:
45% 'forage'- green or dry hays, grasses, yard plants, alfalfa, leaves, flowers, etc.
40% vegetables, mostly dark leafy greens, but can include squash, mushrooms, etc. There are some vegetables that are not good at all (light green head lettuces), or not good if used too much (beans and the the cabbage family- brocolli, cauliflower, etc. for example). The best solution is to offer variety, variety, variety!
10% fruits and berries, but not citrus. Boost this to 20% for Red- and yellow-foots.
Less than 5% proteins- pinkies, crickets, worms, bugs, hard boiled egg (mashed lightly with the shell), tofu, sardines with bones, etc.
Use a good reptile multivitamin and calcium supplement as directed. (Dr. Mader recommends some calcium every feeding, and some vitamins every week or two.)
