The answer is, like many things, it depends. Which meal, and which hotel?
You can find a number of buffets at some hotels like the Gold Coast or Terrible's (which tastes pretty good, actually) that are pretty cheap. $4.99 breakfast, $6.99 lunch, and $9.99 dinners.
Side note: Terrible's is actually named for "Terrible Herbst", a fictional bad guy, who started in gas stations in the southwest, then opened a casino. Kind of cute, actually, they cater to the budget crowd.
Sam's Town, about 6 miles from the strip, has buffets for about the same price, but noticeably better food.
Upscale hotels, like the Paris, are more expensive: $14.95/$17.95/$24.95. However, Le Village Buffet is considered one of the best in town. Some are ultra expensive, like the Bellagio, $33.95 for dinner, or Bally's $52.95 brunch.
One of my favs is the buffet at the Flamingo: the Prime Rib, shrimp, and crab buffet for $15.95 every night. Good shrimp, king crab legs which are already cut open, and prime rib. I eat $16 worth of shrimp alone. And there's just something decadent about not having to cut (or smash) open your crab legs.
Bon apetit!

If you want an up to date list of all the buffets in LV including the specialty buffets, times, prices, etc. this site is up to date unlike the one above, which is several years old..
The LVA site also has ratings for each buffet
http://www.lasvegasadvisor.com > "VEGAS INFO" > buffets
A couple of my favorites are the lunch buffets at Main Street Station and Orleans, both about $8...IMHO The best seafood buffet for the money is the one at Fremont, $16...
You also might want to check out the "graveyard specials" - And the "meal deals" listed in the top ten values
The Mirage buffet is rated #1 right now.
Palace Station has a very good buffet and they have rolled prices back about 20 years it looks like...I don't see how you can go wrong with this one..Their breakfast buffet has always been one of my favorites anyway.
Breakfast - $3.99
Lunch - $4.99
Dinner - $5.99

Depends on where you go. Average will run you $10+
For dinner it can be anywhere from $10-$40. Depends on whether you are going to the crappy Wild Wild West buffet or the Rio seafood buffet.

I really enjoyed going to buffets over the years, but for the same price I can get an excellent high dollar meal with all the extra trimmings. Plus, I don't have to stand in line.
