when you set up a bunch of different objects and roll a ball or something to knock things over and sometimes perform a series of different jobs. sorta like that car commercial that came out where all the parts were laid out and worked together.

It is only called a "Rube Goldberg" device in the United States. In England, there is another name for the same concept.
The name comes from the name of a cartoonist who drew far-fetched devices. Some of these cartoons bordered on political cartoons, where the devices (and the comments made about the devices) contained sarcastic references to then-current political topics.
You should check out the movie titled (as translated into English) "The Way Things Go". It is a real-life contraption that involves rolling tires, burning candles, and dripping acids.
