Accumulated grease / fats could lite on fire.

I think it is possible. It depends on the type of build up (food debris, sugar-based liquids, oil-based liquids), how much build-up, and how hot the oven may be set at. Oils can reach a flash point tempature (different depending on the oil), if smoking occurs this vapor can build up and ignite.

What may be more of a danger if this build-up manages to clog gas valves and pilot lights, which could cause the accidental build-up of gas and sudden ignition.

Creosote build-up in chimneys is a real fire-hazard, hence the need for chimney sweeps. But this build up is different and may I don't think it can occur exactly the same way in a kitchen cooking oven. (see source below).

A side note: A dirty oven causes various problems with uneven cooking, hot and warm spots, maintaining proper and accurate tempature, and unaccurate cooking times. This is because the heat doesn't reflect/bounce around the oven evenly.

Yup. But usually the black smoke and small flames will alert you before the house burns down. Do her a favor, buy her some easy off oven cleaner.

I don't think it would burst into flames, but all that old food might start baking again and produce a lot of smoke.

yes i had a toaster over that did that cause i didnt clean it out. it just burst into flames and almost burned down the house. i learned my lesson

I even tend to pass in the choice direction with my anger. i'm getting chilly. whilst i'm incapable of speech or emotion, it quite is whilst human beings understand i'm pissed. undesirable issues frequently take place whilst i'm indignant because of the reality that i'm incapable of feeling. I have not got any regard for the discomfort of others, and that i act with out thinking of the implications.

Yes it can. Things have boiled over or spilled over in my oven and caught fire (even in the same cooking!)
