We bought it just before christmas, let it settle in for a couple of days and have been offering it pinkies every few days, but it seems not to want to eat. What can we do?

We leave the pinky in the vivarium for about 24 hours and then remove it each time

Is your tank and basking area the correct temperature? If not, the snake may refuse to eat. It may also be sick, stressed, or have mites. Check all your temps, humidity, etc, and clean out the tank. He should eat when he's ready if the conditions are right and he is healthy.

Is it very young? Sometimes cornsnakes are sold "right out of the egg". They are less expensive, but the risk that they will have difficulty eating is always there. Or he could be stressed or difficult.
You can try several things. Leave the pinky in his cage overnight.
Pinch the pinky's head so its brains come out; snakes seem to love this.
Offer him a live pinky (leave it in the tank overnight)
Weird, I know, but try putting some gerbil fur on the pinky. This has worked for me in the past.

Keep offering him food over the next few weeks. If he still does not eat, you may have to force feed him. Pick him up, and hold his head gently but firmly between your thumb and index finger. Take a pinky, and push its head into your snake's mouth. This should force the snake's mouth open, and you can gently push the pinky into its throat. Once it hits a certain point, the swallowing will be automatic.

it just might not be hungry snakes can go months without eating make sure if you put it in the cage and it does not eat it take it out right away because it wont eat even if its hungry if a mouse is in the cage to long also check and see if the snakes eyes are cloudy that could be a sign that its shedding and they wont eat when there about to shed.
