Essential programs to run at startup would be your antivirus and firewall. You can safely disable any update programs that run at startup such as java update, then there are thins like quicktime and realplayer that install tray icons that really aren't needed. If there is anything that starts up automatically that you know you don't need or can start when needed then disable them.
If you have spybot search and destroy you can enable advanced mode from the mode menu and there is a startup tool in the tools menu to the side. This gives some information on what various startup items are. If you disable something you can always reenable it

If you append your post with a list of the programs I will let you know which ones you should keep running and which ones are not essential to your computer. I will also give you the reasons why you can or cannot remove it from your startup menu.

start up programs can be convenient but if possible avoid any at all. Ex. Windows or Msn Messenger these generally get added to your start up list to save you the trouble of clicking on them. Disabling this and just clicking on the button yourself can speed your computer up considerably.

Just to clarify though, please don't confuse programs with processes. If you really did mean programs though, removing them from startup will allow your computer to boot up faster when you first turn it on and free up some RAM so that your computer can execute commands faster. Decide what you want running and what you only use sometimes. If you meant processes, LEAVE THEM ALONE.

If you don't use those programs remove them as they take up processes which reduce the perfomance of your pc
As for antivirus, you should keep that running, for example on my pc i only have the following most commong programs:
acrobat speed launch
rundll32
sndmon
nvcpl

Keep the virus programs and if you really do not need the rest then remove them via control panel and then add/remove

click start, go to run type in msconfig, choose what start programms you want to keep. if you have any doubts leave them running. also try opening each in turn and choosing the option of not having it load at start up.
