everyone above seems to have said because "they are yellow". ya dont say... never noticed... silly people. the real question is..... WHY are they YELLOW.
sorry but i dont know the answer. i guess that whoever invented it liked the color. who knows. try googling it.

Because the original phone books were divide into 3 sections the white pages -- general directory, the blue pages -- Government Directory and the Yellow pages-- to look up services by service type. And people used the Yellow pages the most so the name stuck.

So the yellow pages were inveted because someone was a bit lazy to go get some more white paper.
